Ingredients
For the Wrap
* 1 cup boiled chickpeas
* Slightly less than 1 cup spinach
* 50-60 g paneer
* Salt to taste
* 2–3 green chilies
* 1 small piece of ginger
* A pinch of asafoetida (hing)
* Water, as required
* 1½ tbsp gram flour (besan)
* About ¼ tsp baking soda
For the Stuffing
* 100 g paneer, crumbled or cubed
* 1 medium green capsicum, finely chopped
* 2 tomatoes, finely chopped
* 1 onion, finely chopped
* 1–2 tsp oil
* Salt to taste
* Black pepper powder, to taste
* Oregano, to taste
For the Sauce
* 1 tbsp fresh cream (optional – replace with hung curd for a lighter version)
* 2–3 drops tomato ketchup
* ½ tsp Ching’s Green Chilli Sauce
For Assembling
* Lettuce leaves
* 1 medium carrot, cut into thin juliennes

Method
Step 1: Prepare the Wrap Batter
Add the boiled chickpeas, spinach, paneer, green chilies, ginger, hing, salt, and a little water to a blender. Blend into a smooth, slightly runny batter. The consistency should be thin enough to spread easily on a hot pan, just like shown in the video—it shouldn’t be too thick.
Now add the besan and baking soda to the batter and mix well. The baking soda helps prevent the wraps from sticking and gives them a better texture.
Step 2: Prepare the Stuffing
Heat a pan with very little oil. Add the chopped onion and sauté for a minute. Add the capsicum and cook for another minute before adding the paneer. Season with salt, black pepper, and oregano. Cook for another 2–3 minutes, then switch off the heat and let the mixture cool completely.
Meanwhile, prepare the sauce by mixing the fresh cream (or hung curd), tomato ketchup, and Ching’s Green Chilli Sauce. Once the stuffing has cooled, mix in the prepared sauce.
Step 3: Cook the Wraps
Heat a non-stick pan and pour a ladleful of batter. Spread it as thinly as possible to make a wrap-like layer. Cook patiently over medium heat until one side is completely set, then flip and cook the other side for another minute or two.
Since these wraps are quite delicate, each one takes around 8–10 minutes to cook properly. Don’t rush this step for the best results.
Step 4: Assemble the Wrap
Place a lettuce leaf on the cooked wrap. Add a generous amount of the prepared paneer stuffing, followed by the thinly sliced carrot. Roll the wrap tightly and serve immediately.
